What apple cheese is

Lithuania Travel describes obuolių sūris as a firm sweet made from apples cooked down over a long period. Cheese refers to its shaped, sliceable form, not its ingredients.

Buying it as a food souvenir

Apple cheese appears among the edible souvenirs highlighted for Anykščiai. Check the label: this plain recipe contains apples, sugar and lemon, but a bought version may have other additions.

Allow time for drying

Reduce the fruit before shaping it. Drying is a separate stage, so allow several days rather than count only the cooking time.

How to serve it

Cut small slices to eat on their own, or serve alongside rye bread and curd cheese. The apple sweet and the dairy cheese remain separate foods.

Ingredients

Add only what you need, or add the whole recipe at once.

Apple cheese

  • 3.5 kg cored and sliced apples, prepared weight
  • 500 g sugar
  • Juice of 1 lemon

Method

  1. Mix apples, sugar and lemon juice. Leave for 24 hours to release juice.
  2. Drain into a heavy pan. Boil the collected syrup until about one-third remains, then add the apples.
  3. Cook, stirring frequently, until the fruit collapses and the paste stays apart when a spoon is drawn through it.
  4. Pack into a shallow paper-lined mould, cool and unmould. Dry in clean, dry, well-ventilated conditions until firm enough to slice; turn as needed.

Recipe notes

After the syrup stage, reducing the fruit takes roughly 1 to 1.5 hours; judge by the consistency rather than the clock.

This home recipe is not a validated method for long-term storage at room temperature.

Ingredient information: No dairy or wheat in the listed recipe. Check the labels of bought ingredients.
